The 42nd edition of the Sagra del Fagiolo celebrates the distinctive Cave bean, a unique local variety available in yellow and green. Depending on where it's cultivated, this bean develops truly unique flavors and organoleptic properties, allowing you to savor dishes with tastes and aromas from a bygone era. Thanks to the mineral salts dissolved in the local, low-limestone soil, the Cave bean finds ideal conditions to enhance its pleasant flavor and tender skin. Its cultivation is organic, requiring no chemical fertilizers or specific phytosanitary treatments, thanks to the richness of its soil. The types of beans produced are “Verdino di Cave” and “Giallo di Cave.” As early as 2004, the Department of Plant Biology and Agro-environmental Biotechnologies at the University of Perugia began an investigation to determine if this seed, in addition to being a typical product, is also an “original” variety. For this reason, the seed has been placed in a seed bank to ensure its long-term preservation and the maintenance of this genetic resource, an invaluable treasure of the territory. To celebrate its exquisite taste, the Sagra del Fagiolo is held every year in October, just after the harvest. For several days, it’s a festival of work and social gathering for all the villagers, and a culinary celebration of carefree fun for the ever-growing number of visitors who come from far and wide.
