For over a century, the first days of October have lit up Sinalunga with the famous Fiera alla Pieve, a symbolic event for the entire Valdichiana. Originally a three-day event in the second week of the month, the fair was linked to the veneration of the Madonna del Rosario, housed in the Pieve di San Pietro ad Mensulas. The influx of hundreds of pilgrims from Central Italy soon attracted local butchers, ready to offer comfort and refreshment to tired travelers. From that ancient hospitality and their most famous dish, the legend of porchetta was born, becoming the secular icon of the festival.
