The Pro Loco Aper90 of Capocavallo presents Aperissima, a 'Festival of Good Eating' that, like every year, brings together the best orchestras for those who love to dance on the large dance floor, alongside great music from the AperPub. The menu, featuring local gastronomic delights, is curated by Chef Simone: from excellent cured meats and salads for starters, to traditional and unique first courses, and meats cooked over an open fire. Naturally, strictly local wines accompany the succulent dishes. The traditional paella returns on Friday the 14th, while every evening… unlimited sangria!
Indulge in a feast of local Umbrian specialties! Start with the generous APERissima appetizer featuring prosciutto, capocollo, salami, local pecorino and caciotta cheeses, panzanella salad, and a legume salad with salted ricotta and sun-dried tomatoes, all served with traditional torta al testo flatbread. Savor unique regional dishes like lamb coratella with torta al testo, or hearty beans and pork rinds. Main courses include rich gnocchetti with goose ragu, strozzapreti with guinea fowl white ragu, and Umbricelli cacio e pepe. Don't miss the special paella on Friday the 14th! For meat lovers, there's grilled lamb scottadito, a substantial 500gr beef steak, BBQ ribs, mixed pork grill, and herb-roasted chicken thigh. Enjoy various torta al testo fillings like prosciutto crudo, arugula and stracchino cheese, sausage, or the local Sella di San Venanzo.
